Call me a slacker if you wish, but life has become pretty crazy around here; so what else is new?! Truth is, I could give you a thousand reasons why it's been too long since my last post, but I'll spare you. My husband loves apple pie, and he raves about mine. So when I presented him with this strange version of apple something, it was of course met with a bit of suspicion. Why mess with a standard of tradition so fundamental as apple pie in autumn? A bite or two into it, he said "this may be serious competition for first place". Then, another bite..."no, this may actually be the best"! Yup...I was shocked, for that's quite a statement coming from someone who regresses into childhood every September at the thought of apple season and the possibility of a fresh pie!

For those who either cannot or will not eat dairy, I offer this superb version of Espresso Chip Ice Cream, calling it "ice dream" because truly, it is the stuff of dreams for anyone having to kiss dairy good-bye. I had a period of several years where dairy and I were not getting along, hence, you have my sympathies. It was a time when the only dairy free option was a lactose free ice cream; I tried it and chose to abstain. It just wasn't a worthy option.
