When you know it's gonna be a long day; when you won't get much time for a real meal; when you don't want to reach for the all too easy cheap fix, you can count on these nut and seed bars to restore the spring in your step, and do it in a righteous way. I'm calling them Righteous Snack Bars. And for being gluten free and low glycemic, they win a spot on my favorite snack list. A spin on the famous Kind Bars, these are even kinder, because you can quickly make them for a fraction of the cost! How righteous indeed! |

A quick bowl of ultra sweet cereal, toast with jelly, or a pop tart, with juice of course, and our world of convenience is jump started with a dopamine high and a front seat on the daily sugar train. If you've got the time, you may opt for a nice hot meal of eggs and a fluffy white biscuit with jam, french toast with lots of syrup, or a cup of fruity sweet yogurt with granola because you're trying to eat right. It's tough to get off the sugar train, isn't it?! And even when we choose foods sweetened artificially, the taste preferences are not being trained to accept pure and simple food for what it is, making it impossible to learn how to eat clean and love it. ![]() Dairy sensitive people rejoice! Although whipped heavy cream may no longer top your strawberry shortcake, coconut cream delivers lactose free luxury. Trust me on this, you'll be hard pressed to tell the difference. With it's low melting point, going from solid to liquid when temps reach 80 degrees, coconut cream is that melt on the tongue lusciousness. And depending on the brand used, the coconut flavor may vary slightly. The whip will hold up for several days in the frig', but benefits from a re-whipping if it's important for the occasion...and if there's any left! |
