I have fallen in love with the flavors of Indian cuisine. The intensely fragrant spices of curry, cardamom, cloves, cumin, cinnamon, coriander and so many more create complex characteristics so uniquely intriguing and perhaps intimidating to some. So foreign are the flavors and yet they are beautifully heady with sweet rich perfumes of spices many have never explored. I am not an expert, but I am hooked!
If you wanted me to list my top 3 comfort foods, this would be right up there for sure. What can be better than potatoes cook in their skin then peeled and sliced, rings of hard boiled eggs, and smokey kolbasa, all layered and bathing in a bubbling sour creamy dreamy sauce? It's the kind of meal that keeps your fork sneaking back to the pan for just one more shameful bite. Why can't food this delectable be tops on the health food charts?! This is not the meal you look for when you're counting calories and trying to whittle away the "muffin" you grew over the holiday! But it is the meal you're looking for when winter's arctic blast has you chilled to the bone and you need a lavish plate of potato pleasure to wipe away winter blues. Italy's tribute to the king of leftovers, the humble croquette, Arancini is made of risotto formed into balls, breaded and fried into golden globes of cheesy gooey greatness. In it's simplest form, this recipe calls for a small piece of mozzarella stuffed in the center of cooled risotto, but the possibilities are endless. Many recipes call for a meat stuffing, peas, pistachios, olives, or whatever you creative genius can come up with! How about a dessert Arancini made of sweet rice and pine nuts, stuffed with a cube of dark chocolate, fried, and served with a raspberry sauce? Woa baby, that'll have to be another blog!
