A Narragansett term meaning "broken corn", succotash was an early American dish of corn and lima beans, now usually served in casserole form and found on many Thanksgiving tables. Here is another grain and legume dish that supplies all the essential amino acids to fulfill the body's protein needs, in an inexpensive plant based form, like beans and rice or peanut butter on bread. Add garden fresh sliced tomatoes to the plate and here is a salad that can become the basis for a completely healthy meatless meal!
serves 6-8
4 ears cooked corn on the cob, cooled and removed from cob
8 oz cooked and cooled lima beans or soy beans (aka "edamame")
1/2 medium green pepper, small diced
1 medium cucumber, partially peeled and diced
1/2 cup scallions or onion, cut small
1 small jalapeno, seeded and very small diced, optional
1/4 cup chopped fresh cilantro
1/3 cup olive oil
2-3 Tb fresh lime juice, to taste
salt and pepper to taste
Mix all ingredients, adjust seasoning and serve cold.
