Shrimp Avocado and Grapefruit Salad
10-12 large cooked and peeled shrimp
Honey Cider Salad Dressing* (see previous blog)
Red onion sliced very thin, for garnish, optional
If you are starting with raw shrimp, clean it, cook it, cool it, and peel it. Peel and segment the grapefruit, set aside. If you have not made the salad dressing yet, this would be a good time! Prepare plates with a bed of baby spinach or salad greens. Center avocado slices on plate, surround with grapefruit segments, top with shrimp. Drizzle with Honey Cider Salad Dressing and garnish with red onion if desired.
